The coral lentils, kesako? It’s actually a red lens from which the membrane has been removed. Its diameter is rather small. We appreciate it for its pretty orange yellow color that gives a colorful touch to our recipes. Its taste is comparable to green lentils, but it is more delicate, slightly sweet. It is a seed widely used in Indian, Asian and North African cuisine. In these countries, it is one of the main sources of protein.
