Ingredients
- 1kg of sweet potatoes
- 2 confit duck legs
- Duck rillettes with Périgord pepper of 220g*
- 1.5 tablespoons of Mathilde mustard recipe with white wine*
- 50g of butter
- Himalayan pink salt*
- Wild Voatsiperifery pepper*
- Parmesan
- Thyme
- Cooking rings
Preparation
In a pan over low heat, melt Parmesan shavings, then place them on a rolling pin for shaping and let cool.
Cook the diced sweet potatoes in salted water.
Shred the duck, mix with rillettes in a pan for a few minutes over low heat.
Drain the potatoes, put in a bowl, add the butter and mustard, mash into a puree and season if necessary.
Butter cooking rings, fill halfway with puree, add a layer of duck/rillettes, finish with puree. You can bake for a few minutes to warm up.
Unmold and plate, garnish with Parmesan tuiles and sprinkle with thyme.
