Why is it important to store your chocolate properly?

Chocolate is a product as sensitive as delicious. Improperly stored, it whitens, melts, or loses its crispness... For the greedy ones, there is no question of losing a single gram. Fortunately, there are tips to enjoy the best of chocolate even in the summer. 

Tip #1: Avoid temperature shocks

Significant temperature variations are the worst enemies of chocolate. They create condensation and cause the famous whitening. 

The good reflex: keep your chocolate at a stable temperature, between 16 and 20°C, away from direct light and heat sources. 

Tip #2: Opt for the wine cellar

We often think of the refrigerator to store chocolate in the summer. But it's a bad idea. Cold and humidity freeze the chocolate, alter its texture, and dull its flavors. 

The ideal solution? The wine cellar is perfect for storing chocolate at a constant temperature. 

If you don't have a wine cellar, store your chocolates in an airtight box, at the bottom of the fridge, and avoid taking them out too often to limit thermal shocks. 

Tip #3: Think of an insulated bag

Are you going on a picnic or visiting friends with some treats in hand? 

Slip your chocolates into an insulated bag or wrap them in aluminum foil to protect them from the heat. Add an ice pack without direct contact with your treats. 

Tip #4: Indulge in chocolate fondue summer edition
